Having a good vocabulary, being able to think logically and critically, and having a good grasp of math are the best things you can do. I'd say sophomore/junior level or higher for most of it. There is no single subject you can take to help. There *are* GRE study books available, and computer-based learning tools to help. I work in this field so I know. It might sound nuts but it's true. People forget what they learned, or never knew it that well in the first place, and that's why so many people do poorly on the math. So get a book and do the practice tests. The best way to do well on the GRE is to prepare specifically for the test. As for the verbal and writing sections, I would say the same advice.
